1 1/2 c. flour
2 1/4 tsp. baking powder
1/4 tsp. salt
1/4 c. egg substitute
1 3/4 c. almond milk
1 tsp. vanilla
1/2 c. unsweetened applesauce
4-5 bananas, sliced
1/2 tsp. cinnamon
nonstick spray
1 1/4 c. Cool Whip Lite, optional
1 c. strawberries, halved, optional

Mix the dry ingredients, stirring with whisk to incorporate well. Add milk, vanilla, applesauce, and eggs. Add more milk depending on thickness of batter you desire.

Pour 1/4 c. batter onto hot and oiled skillet, I use cast iron. Place a few sliced bananas on top of the batter as it is cooking on the first side. When filled with bubbles and nicely browned on bottom, flip pancake over. Cook another 1 min approx.

Add Cool Whip and more fruit if desired. No syrup or butter needed when using Cool Whip. They are so awesome you won’t miss the butter on them.

Makes 10 (4-5″) pancakes…enjoy!
